Donburi(donburi-style dish)

Donburi is a rice bowl dish of japanese style; various ingredients such as meat, fish, vegetables on top of a big bowl called "donburi" of rice. It is usually served with miso soup and japanese pickles on the side.
Donburi-style dish is very popular both at home and at restaurants in Japan. There are many variations in donburi, and what is more, you can vary ingredients according to your liking. That's "DONBURI". Enjoy your original donburi dish!


The representative variations of donburi

"Don" is short for "donburi".

  • Oyako-don

    Chicken, egg and sliced onion are all simmered together in a soysauce-based-tsuyu, and served on a large bowl of rice. It is one of the most major "donburi" in Japan. Oyako means "parent and child". It is an easy cooked dish, eaten both at home and at restaurants, and very popular throughout Japan.


  • Gyū-don

    Thinly sliced beef and onion are simmered together in a soysauce-based-tsuyu, and served on a large bowl of rice. It is one of the most major "donburi", and known as "beef bowl" in the world. In Japan it is usually served at restaurants such as "Yoshinoya". But you can easily cook it at home. Beni shoga(pickled red ginger) is a must as an accompaniment.


  • Katsu-don

    It is a rice bowl dish with tonkatsu(japanese pork cutlet) and egg which is cooked together in a soysauce-based-tsuyu. It is usually served at restaurants, very popular throughout Japan, and one of the most major "donburi" in Japan, too. Especially men like it. Most of soba restaurants serve it. Pork loin is generally used as tonkatsu of katsu-don.


  • Ten-don

    Ten-don is short for "Tempura Donburi". It is a rice bowl dish, tempura covered with ten-tsuyu(tempura sauce) on a large bowl of rice. It is a classic donburi since Edo period, and one of the most major donburi in Japan, too. Tempura of ten-don isn't usually one kind, but several kinds of it. It is generally served not at home,but at restaurants such as tempura restaurants and soba restaurants.


  • Una-don

    It is a bowl of rice topped with broiled eel with salty yet sweet "Tare" made of soysauce and sugar,etc. It is a classic donburi since Edo period, and very popular in Japan. But it is expensive, especially eel from Japan is much more expensive than it from China. So even japanese can seldom eat it. Incidentally, if a box called "jubako" in japanese is used instead of a bowl, it is called "una-ju". "Una-ju" is generally more expensive than "una-don".


  • Tekka-don

    It is a rice bowl dish, red flesh of raw tuna on a large bowl of rice. Rice seasoned with sushi vinegar is usually used, and called "sumeshi". It is garnished with wasabi on, and eaten poured a little soy sauce.


  • Kaisen-don

    It is a rice bowl dish with various raw seafoods such as tuna, salmon, white flesh of fish, japanese scallop, squid, shrimp, octopus, ikura(salmon roe) and uni(sea urchin eggs) and so on. Japanese omelet is usually used. Rice seasoned with sushi vinegar is usually used, but no seasoned white rice is also used. It is garnished with wasabi on, and eaten poured a little soy sauce. Though it is expensive, it is popular in Japan. It is served at restaurants. We can eat fresh and delicious kaisen-don especially in Hokkaido.


  • Ikura-don

    Ikura means salmon roe. Many ikura seasoned with soysauce is topped on rice. Hokkaido is home of ikura-don. because it is very expensive, even japanese can seldom eat it.


  • Uni-don

    Uni means sea urchin eggs. Uni-don is a rice bowl dish topped many uni on. It is eaten poured a little soy sauce. Hokkaido is home of it. Because it is too expensive, even japanese can hardly eat it. Uni-ikura-don, which is topped with both uni and ikura, is also a very luxury donburi which even japanese people dream of eating.


  • Sauce-katsu-don

    It is a bowl of rice topped with tonkatsu(japanese pork cutlet) dressed with sauce like worcestershire sauce. Though it is famous as a specialty of Fukui Prefecture, it is also eaten in other prefectures. Both pork loin and pork tenderloin are used, but in Fukui Prefecture pork tenderloin cutlet(hire-katsu) is usually used.


  • Buta-don

    It is a bowl of rice topped with sliced pork which is sauted with sauce(tare) made of soy sauce, sugar and so on. Buta means pork. It is famous for a specialty of Hokkaido. Especialy Obihiro city is a home of "buta-don".


  • karē-don

    It is a bowl of rice with curry sauce on top. The curry sauce is not ordinary japanese curry, but it contains mentsuyu. It is usually served at soba restaurants.


  • Soboro-don

    It is a bowl of soboro and well scrambled egg on rice. Soboro means seasoned ground meat. Usually ground chicken is used as soboro. It is a homely donburi dish.


  • Chūka-don

    Stir-fried vegetables, mushrooms, seafood and sliced pork are all simmered together in a thicken sauce, and served on a large bowl of rice. Boiled quail's egg is a must. Chūka means "China", and "Chūka-don" is inspired by Chinese cuisine, but it is not in China. It is very popular in Japan, and served both at home and at restaurants.


  • Tenshin-don

    It is a bowl of rice with a crab meat omelette and a thick sauce on top, and called "Tenshin-han", too. It is inspired by Chinese cuisine, but it is not in China. It is popular in Kansai region centering on Osaka City.


  • Mabo-don

    It is a bowl of rice with mabo-tofu on top. Mabo-tofu is a Chinese dish from China's Sichuan province, and a combination of tofu and a hot spicy sauce. Japanese mabo-tofu is milder than Chinese. It is very popular throughout Japan, and served both at home and at restaurants.
