This is light soy sauce(usukuchi), especially popular in the Kansai region of Japan, and both saltier and lighter in color than general dark soy sauce(koikuchi). Higashimaru is a soy sauce maker in Kansai region, and very famous for "usukuchi" soy sauce. Use osuimono
and Kansai-style udon, chawanmushi, etc.
