Nasu-no-miso-itame(miso eggplant stir-fry)


  • 5 eggplants
  • 50g ground pork
  • A{ 1/4cup(50ml) dashi stock, 2tbsp(30ml) sake, 2tbsp sugar,2tbsp red miso }
  • 1tbsp(15ml) sesame oil


1. Combine the dashi stock, sake, sugar, and red miso in A.

2. Peel the eggplants in alternating strips, and cut into chunks.

3. Heat sesame oil in a flying pan, and saute the ground pork. Then saute the eggplants.

4. Once the eggplants are browned, add the sauce A, and stir-fry until the sauce covers it.

* You can use ground beef or ground chicken instead of ground pork.

* You can add red hot pepper with your liking.
