Madai means a red sea bream. It is soy sauce with (umami)extract of madai from Mie Prefecture in Japan. You can use it as it is for sushi, sashimi, chilled tofu, japanese omelet, and so on. Great as diluted, too. Dilute the sauce with water 6 times for niku-jaga and 9 times for chazuke..
