Simmered Fish
This is a basic of simmered fish.
Ingredients:( 2servings)
- 2 fish fillets(a flatfish, etc)
- A { 100ml(1/2cup) dashi stock, 60ml soysauce, 15ml(1tbsp) mirin, 60ml(4tbsp) sake, 15g(1tbsp) sugar }
- 1 piece ginger
Directions;
1.Cut crosses the skin of the fish. Julienne the ginger.
2.Combine A into a frying pan and bring to a boil. Put in the fish with the skin side up.
3.When the edge of the fish starts to turn white, put in the ginger to remove the fishy smell. Put in a drop lid, and then simmer on medium heat for 12 to 13 minutes. Occasionally use a spoon to scoop the broth over the entire fish for a even flavor.
4.When the soup has seeped into the fish, remove to a plate.
* If the temperature of the broth is low, you will get a fishy smell. Make sure the broth is boiling before putting in the fish.
